In his hilltop restaurant in Colombier, with its open, airy garden setting, chef Frédéric Debotte and his staff prepare high-quality traditional French cuisine mixed with subtle Creole flavors.
Platters of fresh fish, sweetbreads with morels, tuna tartar, and an exotic salad with medallions of lobster are among the chef’s specialties, and all of the bread and desserts are homemade.
